Backpacker Meals #3: Meatballs and Bolognese

 

My last recipe, for curry and stir fry, was more about a way of reusing ingredients than the instructions themselves. This is kinda the same. You don’t need me to tell you how to make a bolognese using sauce from a jar or how to take meatballs out of a packet, I’m just saying that replacing meatballs with mince meat gives two different meals with very similar ingredients.

I mean, you can actually use some of that mince meat to make meatballs but I went with pre-bought Swedish meatballs. They were cheap and plentiful. I’d like to say it was to get a different flavour and not laziness but that wouldn’t be entirely true.

Spaghetti bolognese is a classic meal that is perfect for anyone on the go, as it is well suited for making a big batch and freezing. If you’re sticking around some place for a while and your hostel has a freezer then you could do just that.

If you are running low on cash, spaghetti and meatballs or spaghetti bolognese are still pretty tasty if all you have is the pasta, meat and sauce but if you can splash out on some extras then peppers, mushrooms and onions give some more flavour and a bit more goodness. You can also use up the stuff you bought for that stir fry and curry.

Ingredients

      • One onion
      • One red pepper
      • Two handfuls of mushrooms
      • One portion of mince meat
      • Handful of meatballs
      • One jar bolognese sauce
      • 150g spaghetti (I generally use 200g but I like big portions!)

Spaghetti bolognese– one portion

Ingredients

      • Half an onion
      • Half a red pepper
      • One handful of mushrooms
      • Mince meat
      • Half jar bolognese sauce
      • 75g spaghetti

Recipe 

      • Slice and dice onion, peppers and mushrooms then fry in oil till starts to soften before adding mince and stir until browned all the way through.
      • Now add half jar of sauce and let simmer. Remember to stir at regular intervals
      • Boil water and cook spaghetti.
      • Serve.

Spaghetti and meatballs– one portion

Ingredients

      • Half an onion
      • Half a red pepper
      • One handful of mushrooms
      • Meatballs
      • Half jar bolognese sauce
      • 75g spaghetti

Recipe 

      • Slice and dice onion, peppers and mushrooms then fry in oil till starts to soften before adding meatballs (slice in half to cook quicker) and stir until browned. Now add half jar of sauce and let simmer.
      • Boil water and cook spaghetti.
      • Serve.

If you invested in some cheese for that risotto, then top both dishes off with some cheese for extra flavour.

What to do with the leftovers? Any left over mushrooms can be put in with that extra risotto rice. Also, if you use a quarter of the onion and red pepper, instead of half, you can use the rest for some of my other meals
